<p>This disease is caused by intolerance to gluten, which destroys the walls of the duodenum (the lining of the small intestine) and prevents the absorption of food and causing chronic inflammation of the intestine when gluten is consumed foods.</p>
<p>It is one of the most common diseases related to food intolerance, and affects people of all ages. However, children 6 months to a year old and adults 20 to 40 years are most vulnerable, and almost 70% of those affected are women.</p>
<p>Gluten is found in bread and any food containing wheat, rye, barley or oats. Buns, pasta, soup noodles, biscuits, muffins and cakes in general. Durum wheat, manufactured products containing any of the previous meal and in general all manufactured products unless stated that is free of gluten. Food and malted milkshakes. Chocolate is not declared as free of gluten. Teas and drinks made with grains such as beer, malt, barley water.</p>

<p>Foods that can be consumed freely are: Milk, cheese, butter, cream, meat, seafood, eggs, fruits and vegetables, legumes, soybeans, rice, maize and tapioca, sugar, honey, salt, vinegar, coffee and tea, chamomile, pennyroyal, and carbonated beverages. These can be eaten freely, but in its natural and fresh. Never preserved, canned or dried instant.</p>

So little by little and even today, different methods of food preservation were developed that are aimed at maintaining the properties of the food intact longer.</p>
<p>There are various methods of food preservation:</p>
<p><strong>Dried or dehydrated: </strong>This is one of the oldest methods used to preserve all kinds of food. Fruit, meat or vegetables were placed to sunlight to remove water by evaporation, so was achieved with a much longer the food without this process. This method is based on the fact that microorganisms that degrade the food can not grow in a dry environment.</p>

<p><strong>Salted and smoked: </strong>Other methods of preservation used since ancient times. Traditionally used to bring meat or salted fish travel through large areas in which there was no other source of food. The common kitchen salt prevents the attack of germs acting as an antiseptic, and protecting food. It also removes moisture.</p>
<p><strong>Canned: </strong>This modern method is applied to almost any food. To be packed in a hermetically sealed vacuum after being heated, any organism present is removed and microorganisms are prevented from access from outside</p>
<p><strong>Refrigeration and freezing: </strong>Freezing temperatures prevent the growth of some microorganisms. The frozen food keeps intact the properties of food for months. If we add the vacuum-packed food can be kept intact for long.</p>
<p><strong>Conservation by chemical means: </strong>There are some chemicals that destroy microbes. However, these additives can be harmful to health so caution should be exercised if we consume foods with this type of conservation methods.</p>
